With the big game coming up this weekend for football fans (or even those who just like a reason to get together and eat great food in the middle of winter with friends), snack food is about to abound. Considering that as a nation we consume the second-largest amount of food on Super Bowl Sunday bypassed only by Thanksgiving, maybe we can find ways to make delicious snacks and foods that will satisfy our cravings for salty, crunchy and sweet without busting our nutritional belts. With that thought in mind, I have assembled a series of delicious recipes that your tummies and bodies will thank you for.
Snacks:
Homemade Sweet Potato Chips – From a Beautiful Mess. The soaking before baking and then combination of herbs (any you want!) are the keys to make these really spectacular and crisp.
Cauliflower Poppers – From Whole Lifestyle Nutrition. I’d even consider tossing this little goodies in some homemade buffalo sauce.
Cheesy Cauliflower Tater Tots – From I Breath… I’m Hungry… Did somebody mention cheese and tots? Enough said.
Homemade UnJunked Cheetos – From Maria Mind Body Health. Only 4 ingredients, and no grains.
Grilled Kale and Cheese Stuffed Tortillas – From Edible Perspective. If you think you don’t love your greens, I dare you to try these. They are really fantastically crunchy and savory.
Barbecue Baked Onion Rings – From Joy the Baker. Baked instead of fried, but with all of the flavor and then some. If you are looking to go grain free, try using corn starch in place of the AP flour, and crumbled plantain chips in place of the panko crumbs.
Sweets:
Flourless Red Velvet Brownies – From Butter Nutrition. These tasty brownies get their red color and additional sweetness from beets!
Paleo Chocolate Chip Cookies – from Whole Lifestyle Nutrition. Completely Grain free.
Soft and Chewy Molasses Spice Cookies – from PaleOMG. Also completely grain free and uses only molasses as the sweetener.
Main Dishes:
African Beef and Peanut Stew – From the Kitchn. Why not try something a little exotic and not weighted down with extra grease? I highly recommend this recipe in case you’re looking for something different than they typical chili type of dish.
Bacon Meatballs with Mango Honey Mustard Sauce – From PaleOMG. Paleo/gluten-free friendly, and come on, bacon.
Moroccan Grilled Lamb Kefta Kabob – From Serious Eats. Meat from a good source plus lots of herbs and spices makes for a tasty and healthy meat dish with a side of tzaziki sauce.
Chicken Enchiladas – From Pineapple and Coconut. Scratch made sauce and gluten-free corn tortillas make this rise above the average enchilada.
Shrimp and Rainbow Quinoa en Papillote – From Jelly Toast Blog. Steamed shrimp, veggies and quinoa rises above the sum of it’s parts with lots of fresh lemon and dill. And it’s in its own little packets!
Side Dishes:
Garnet Pilaf – From the Sprouted Kitchen. Gluten free and full of yummy sweet potato goodness.
Chickpea, Barley and Zucchini Ribbon Salad with Mint and Feta – From the Kitchn. Refreshing and savory. Sub the barley for quinoa if you are avoiding gluten.
Chickpea and Zucchini Fritters – From the Endless Meal. I love any vegetables in fritter form. The chickpeas make it closer to a falafel.
